One of the most beloved recipes from Minas! Crunchy on the outside, soft on the inside, and with that irresistible smell coming from the oven.
Ingredients
- 500 g of sour tapioca flour
- 250 ml of milk
- 100 ml of oil
- 1 teaspoon of salt
- 2 eggs
- 200 g of grated Minas cheese (semi-cured)
- 50 g of grated Parmesan cheese (optional)
Preparation method:
In a saucepan, heat the milk along with the oil and salt until it starts to boil.
Place the tapioca flour in a large bowl and pour the hot mixture over it. Mix well with a spoon until a uniform dough forms and let it cool for a few minutes.
When the dough is warm, add the eggs one at a time, mixing well after each addition.
Add the grated Minas cheese and, if desired, the Parmesan. Mix until a soft and slightly sticky dough forms.
Grease your hands with a little oil and shape balls the size of a walnut.
Place them on a baking sheet without the need to grease it, leaving space between them.
Bake in a preheated oven at 180°C for approximately 25 to 30 minutes, or until golden brown.
Serve while still warm — it's impossible to eat just one!
