A classic from Minas Gerais full of flavor and history — a hearty and beloved dish.
Ingredients
- 500 g of cooked and drained carioca beans
- 200 g of diced bacon
- 200 g of sliced calabresa sausage
- 1 medium onion, chopped
- 3 cloves of garlic, chopped
- 3 eggs
- 2 cups of manioc flour
- Chopped green herbs to taste
- Salt and black pepper to taste
- Oil or lard for sautéing
Preparation method:
In a large pan, fry the bacon until golden.
Add the calabresa sausage and fry until well browned.
Add the onion and garlic and sauté until soft.
Crack the eggs directly into the pan and stir until fully cooked.
Add the cooked beans and mix well.
Gradually add the manioc flour, stirring constantly to incorporate.
Season with salt, pepper, and finish with chopped green herbs.
Serve hot — it pairs perfectly with sautéed kale and white rice.
