Cornbread is a guaranteed presence at the afternoon coffee in Minas, perfect with fresh coffee.
Ingredients
- 2 cups of cornmeal
- 1 cup of wheat flour
- 1 cup of sugar
- 1 cup of milk
- 1/2 cup of oil
- 2 eggs
- 1 tablespoon of baking powder
- 1 pinch of salt
- Fennel to taste (optional)
Preparation method:
Preheat the oven to 180°C.
In a bowl, mix the eggs, sugar, and oil until a light cream forms.
Add the milk and mix again.
Add the cornmeal, wheat flour, and salt, stirring until a homogeneous dough is obtained.
If you like, add fennel to give that traditional aroma.
Finally, add the baking powder and mix gently.
Shape small cornbreads with your hands or place the dough in a greased pan.
Bake for 30 to 35 minutes, until lightly golden.
Let it cool a bit before serving — it gets even tastier!
