Very traditional in Minas Gerais, especially in the north of the state.


Ingredients

  1. 2 cups of rice
  2. 4 to 6 pequis cut in half
  3. 1 chopped onion
  4. 2 cloves of chopped garlic
  5. 3 tablespoons of oil
  6. 4 cups of hot water
  7. Salt to taste
  8. Chopped green herbs to taste


Preparation method:

In a pan, heat the oil and sauté the garlic and onion until golden.

Add the pequis and sauté for a few minutes to release the aroma.

Add the rice and mix well.

Add the hot water and salt.

Cook over medium heat until the rice is tender and the water has evaporated.

Finish with chopped green herbs.


Attention: The pequi has a pit with thorns — it should be bitten carefully, scraping only the pulp.
